Mee Rebus Jawa resepi tokcik

Ni cerita lama tapi baru nak cerita... Sepanjang bersama mummy selama 3 tahun dulu byk resepi masakan mummy yang jadi kegemaranku.. Walaupun hanya sekali mummy ajar seperti pan cake dan sebagainya sampai sekarang aku masih boleh mengingatinya malahan dah diperturunkan kepada Along... Mungkin berkat keikhlasan hati seorang ibu serta naluri yang kuat antara seorang ibu dan anak. Cuma satu masakan mummy yang menjadi kegemaranku sehingga kekadang rasa nak sangat makan tapi tak tahu mana nak cari resepi tu.. Hinggalah pada satu hari Tok Cik jemput ke rumahnya selepas hari raya puasa.. Kata tok cik dia nak buat mee jawa.. Mula-mula makan Masya-Allah Allah makbulkan doa aku.. Inilah resepi mee mummy yang aku selalu makan masa kecil dulu.. Senang saja rupanya buat mee ni tapi mummy dulu buat pakai ekor lembu.. Tokcik guna tulang.. Rasanya Ina pun boleh try guna khoruf2 kat Sudan he..he.. Balik ke Perlis nanti aku akan buatkan untuk mummy.. Mesti mummy suka.. Aku juga akan bawa balik bahan2 untuk buat Tiramisu resepi Ina untuk mummy..
Bahan2:-
Tulang dan sedikit daging 1kg -direbus hingga empuk
Tomato 3 biji
Keledek 3 biji (sederhana besar)
Kentang 1 biji
Cili kering 2 sudu besar
Bawang besar 2 labu, bawang putih 3 ulas -ditumbuk halus
Sedikit sos tomato dan sedikit kicap
Caranya:-
Mula2 tumiskan cili kering serta masukkan bawang besar dan bawang putih
Tomato dipotong-potong dan dimasukkan
Masukkan tulang beserta air rebusannya
Keledek dan kentang direbus dan dilenyek dan dimasukkan sekali
Masukkan sedikit sos tomato, kicap serta garam dan sesuaikan rasa
Mee dicelur dan bolehlah disediakan bahan2 tambahan seperti telur rebus, daun bawang, bawang goreng, dan lain2
Sedia untuk dimakan.. Mmmm sedapnya..
Mee jawa resepi tok cik yang mengingatkan aku kembali kepada masakan mummy yang amat kurindui
Aku dah cuba membuatnya dan rasanya amat cepat dan mudah untuk memasaknya dengan syarat tulang dah direbus dan bahan2 lain dah siap.
Cuba teka ini air apa? Ni bukan sirap tapi Roselle..
Dibuat daripada bunga Roselle yang tok cik tanam dam pasu rumahnya.. Tokcik banyak mengingatkan aku kepada arwah tok, mummy dan tok Munah yang suka menggunakan pokok/buah secara asli.. Tok Munah duku biasanya akan membuat jem rambutan daripada buah rambutan yang diambil dari pokok dihadapan rumahnya dan macam2 lagi.. Aku memang suka pada ke-klasik-kan ini.. Sungguh mendamaikan..
Tok cik berjanji nak tolong semaikan anak pokok Roselle dan berikan pada aku untuk ditanam dalam pasu2 besar yang ada di rumah.. Terima kasih Tok Cik.. Harapnya aku bakal punya masa untuk itu..

Lepas bunga Roselle tu di blend untuk airnya, hampasnya dibuat jem Roselle. Tok cik berikan sedikit dan rasanya sungguh sedap.. Tak manis macam jem strawberi yang dijual dan punya preservative.. Kagum aku dengan Tok Cik..
Bukan sahaja air dan jem Tok Cik buat sendiri malahan mee juga Tok Cik buat sendiri menggunakan hanya tepung dan kunyit..
Sungguh menyihatkan dan rasanya juga lebih sedap daripada mee yang dibeli.. Biasanya aku hanya akan menggunakan mee cap IBU kerana tiada preservative.. Teringin juga nak beli mesin yang sama dan ikut langkah Tok Cik tapi takut tak berkesempatan nak membuatnya.. Tunggulah baby besar dahulu mungkin boleh beroperasi macam Tok Cik buat mee dan roti sendiri Insya-ALLAH. Menurut Tok Cik Fiza juga ada mesin yang sama dan buat perkara yang sama macam Tok Cik (Air, jem Roselle serta mee).. Masya-ALLAH satu ilmu baru untuk aku.. Ilmu yang sangat2 aku hargai..
Hasil air tangan ibu itulah yang bakal melahirkan anak2 yang soleh/solehah kerana hati kita dibentuk daripada makanan.. Banyak makanan sekarang sukar untuk ditentukan kehalalannya.. Patutlah ramai anak2 akhir zaman tidak tentu arah perangainya.

Creamy Seafood Carbonara vs Tiramisu

Dah promise Along Nooraini nak bagi receipy Creamy Seafood Carbonara si Syeedah.. (Mintak izin yea Syeedah copy receipy :-D). Maaf ye long lambat sket...



Ingredients:


3 tbs butter
3tbs flour
3 cups of fresh milk
1/2 cup of cheddar cheese

1/2 cup of mozarella
salt & pepper
seafood

Cara2.

3 tbs butter, panaskan, bila dah cair, masukkan 3 tbs flour, then goreng, remove from heat, masukkan 3 cups of fresh milk. then stir, pastu bring to boil, slow the heat, kacau til it's thick. in another saucepan, masukkan 1/2 tbs butter, then saute garlic, masukkan prawn and clam. pastu bila dah 3/4 cook, masuk dalam sauce tadi. pastu stir, grate cheese, salt and pepper to taste.

And below are the photos of the Tiramisu that my sifu (Ina) thought me before she went back to Sudan.. It tastes delicious yummy yummy.. Few days after that I tried again and walla... It looked good and was irresistable... This time as adviced by Ina I put a bit more nescafe..to give a stronger taste..Mmmm yummy.. Thanks dear Ina..

My trial after few days, I put a bit more cocoa powder
And again before the great receipy lost I'd better type it here..
Ingredients (A)
2-3 tbs of nescafe granules
half a jug of water
(Mix and keep in fridge to cool)
Ingredients (B)
Whipped cream
1-2 tbs icing sugar
(Whipped until peaks form)
Ingredients (C)
2 tubs of philly cheese
2 egg yolks
3 tbs of icing sugar
(Whipped)
Other ingredient
Cocoa powder
Lady fingers
How to do:
1- Dip lady fingers into nescafe mix. Arrange in a container
2- Mix B & C =D
3- Put D on top of the lady fingers until all is covered
4- Put another layer of lady fingers and covered with D..
It takes only less than 20 minutes to do it.. Happy trying and it is called Tiramisu Ina's Style he..he.. The lady fingers can be found in Cold Storage.. I took the picture of the lady fingers but cannot find it.. Now only I know that Lady fingers not only meant for 'Sayur kacang Bendi'..he..he..

They Are Jewels! (Updated with pics)


After cutting the cake.. The biscuit a bit dry, next time need to put a little bit more butter (Sorry the plate tak cantik..he..he..)

So how is the outcome Sifu?? he..he.. Next time will make for you.. :)
I cooked simple dishes yesterday. Only "CARBONARA" he..he.. Dah takleh tahan bila dengar perkataan Carbonara disebut2 lam e-mail. Last time dah pernah buat ikut receipy dlm blog Syeedah but can't remember... Have to search in her blog again. Quite difficult as her blog dah byk and it is not grouped as receipy under Label. At last found and we had carbonara.. Yummy! I should tempek here the receipy so that I can always find it he..he.. Will update this post with receipy later coz I have to search again in Syeedah's blog...'sigh'

Then I remember I got enuff ingredients to make non-bake cheesecake using Ina's receipy. Walla.. It turns out to be very-very delicious. Hubby and kids love it so much..Cam 'Secret Receipy' they claimed..Ina also had teached me how to do Tiramisu cake. Will upload the receipy and photo later. I'd never imagine how simple it is and really thankful to Ina for teaching me lots of things while she was in M'sia beside her busy schedule..He..He.. I always regard that she was sent by Allah to me (Allah who always know the whisper in our heart).. May Allah help her in every way ..

Thank you Allah for giving me wonderfuls friends... "They are JEWELS"..and today we had cheesy dishes..he...he.. Lucky that my uric acid was normal again after second test on 1st August..(Cheese is not good for people with high uric acid..but I really love cheesy food 'sigh')Only left cholesterol level that need to be lowered down.. I'm taking Pristin Fish Oil Capsule now once a day.. Insya-Allah hopefully the level will go down.

Ina's Non-baked Cheesecake Receipy (Will update the photo later so that my Sifu can grade my cake..Should I get 3 or 4 Star SIFU?? he..he..)

Ingredients:
10-12 marie biscuits (aku suka guna digestives biscuits)
2 tbs soften butter/margarine
2 tbs ground almonds, with 1/2 tbs extra ( aku guna sliced almonds, bakar dulu baru crispy)
300 gm pack of philly cream cheese @ room temperature
1/2 cup icing sugar (more if you like it sweet)
1 ts vanilla essence
1 tbs lemon juice
1 cup whipping cream
Fruit topping

Method:
Brush sides of 8" springfoam (SF) pan with butter, then sprinkle some ground almonds
In food processor, ground biscuits then mix with 2 tbs butter and 2 tbs ground almonds to form breadcrumb-like dough
Press biscuit mixture at the bottom of SF pan
Leave to chill in the fridge while you prepare the filling
In a bowl, mix cream cheese, icing sugar, vanilla essence and lemon juice
In another bowl, whip cream till soft peaks form (aku suka add a tbs of icing sugar, tak yah pun takpe)
Fold cream into cheese mixture till well incorporated
Pour filling into SF pan
Cover and chill for at least 2 hours (the longer the better)
To serve run a knife at the sides of SF pan before releasing the cheesecake
Top with your favourite fruit (aku suka slices of peach, you can even use strawberry jam or something similar)
